Are recompiled apks less stable (may have bad states and crash)?

I am wondering if extracting an apk and zipping it back up is functionally the same? I notice sometimes modded apks will crash abruptly (because they made code changes). If no changes are made, will it have the exact same behavior (i.e if original apk doesn't crash, modded apk won't crash)?

If you dont mod the apk but decompiling then recompiling it will remove the signature (As far as I know...).
